Random Thoughts – on healthy eating
So I’ve been trying to eat healthier, with more vegetables and fruit in my diet.
I’m not much of a fruit person. They all look delicious, and then I don’t like them.
But I found out that I love mashed cauliflower. It’s so yummy.
On the other hand, I thought I really liked carrots a lot.
Turns out I like carrots when they’re smothered in mashed potatoes and gravy.
How are you doing on your goals this year?

I did make a great cauliflower dish where you pulse it in your food processor first, then sautee. Delicious.
Yeah, me too! Notice I said “trying”, haha. But not trying too hard really. 🙂

While this probably doesn’t come under the purview of ‘healthy eating’, but since you mentioned califlower: I love fried cauliflower! I have no idea why. I just do. The strong taste of cauliflower that usually makes people dislike them, tastes quite good in fried form. 😀
Btw, have you tried sauteed or lightly stir fried vegetables? I love that much more than the boiled/baked form of vegetables.
I love fried vegetables, breaded or batter dipped! Yum!! I do think that frying the cauliflower tones down the taste, makes it a bit more mellow and soft.
